16# CETT Research Seminar

This year's event will feature Dr. Marta Martínez Sanz, a senior researcher at the Spanish National Research Council (CSIC) at the Institute of Food Science Research (CIAL) in Madrid, who will present a paper entitled:

“Valorization of Alternative Biomass Sources for the Development of Sustainable Protein Foods.”

During the session, new strategies for the valorization of biomass as an alternative protein source will be addressed, focusing on innovation, sustainability, and its application in the development of foods of the future.

The CETT Research Seminars aim to promote knowledge transfer, scientific dissemination, and debate surrounding applied research in the fields of tourism, hospitality, and gastronomy.
