With the Specialization in Tourism Management of Culinary and Gastronomic Heritage of the Official Master's Degree in Innovation in Tourism Management, you will discover how to value the gastronomic resources to create and promote tourist destinations and projects.

At CETT-UB, we want to respond to the tourism sector's difficulties resulting from increased competition, the digitization of the economy, and users' easiness to travel. These trends make consumers more experienced and demanding.

Moreover, in 2015, 150 countries approved the 17 Sustainable Development Goals (SDGs) that define the 2030 Agenda. Since then, sustainability is a fundamental element in the development of tourism.

Therefore, public bodies and companies in the tourism sector need innovative and creative profiles to make the most of the gastronomic and culinary heritage and innovate and respond to these new trends.

Do you want to study our program online but don't want to miss our face-to-face classes? Our program has the advantage of being taught in blended mode. Methodolgy and Assesment

The Master's Degree has its own learning system in which you will be the center of the learning process. You will learn thanks to your active participation in the classroom through learning by doing and interaction among students, or own methodologies such as CBL and PBL.


Thanks to our Specialization in Tourism Management of Culinary and Gastronomic Heritage, you will learn the synergies between gastronomic heritage and tourism. You will be able to take advantage of them to design products and experiences that stand out from other territories.

You will also learn the tourism planning tools necessary for the strategic management of gastronomic heritage resources. The set of subjects will allow you to understand, among others:

  • The valorization of gastronomic resources.
  • Innovation in tourism management models.

The specialty focuses on the most relevant aspects of innovation applied to the tourism management of culinary and gastronomic resources, providing reliable scientific, technological, and management training based on the concept of culinary and gastronomic heritage.


  • You will learn the keys to innovation processes applied to the gastronomic and culinary tourism sector to create products and develop destinations with differential value.
  • A transversal education: you will acquire scientific, technological, and management training that covers from the concept of culinary and gastronomic heritage, the creation of an impactful narrative or storytelling, to the creation of memorable experiences combining culinary tradition and avant-garde.
  • You will create innovative experiences linked to culinary and gastronomic heritage, based on new trends originated, in many cases, by culinary innovation and changes in consumer habits.
  • You will learn first-hand about avant-garde cuisine, digitalization in gastronomic tourism products, gastronomic marketing, or sustainable cuisine.
  • You will learn the keys to a gastronomic event's successful organization and the most relevant elements for the development of gastronomic tourism in a destination.
  • You will stimulate your creativity and teamwork skills through design thinking or the customer journey while applying the knowledge acquired.

  • You will have a holistic experiential journey, thanks to visits, masterclasses, learning by doing, which will allow you to improve your professional profile with the acquisition of the skills you need.
  • You will be able to actively participate in transversal events such as the CETT Smart Tourism Congress Barcelona, the CETT-UB Tourism Observatory, the seminar 'Contemporary Issues in Tourism', or the CETT Talent or the Trobada Gastronómica.
  • You will visit the main wine tourism destinations in Spain, explore the gastronomic resources and their organoleptic characteristics, and link with culture.
  • Some of the companies collaborating with the Master are the Alicia Foundation (a world leader in nutritional and gastronomic transformation), the Food Observatory of the University of Barcelona (ODELA); the Mediterranean Diet Foundation; Slow Food; Naturalwalks (a company that advises one of the best restaurants in the world) El Celler de Can Roca, or PRODECA (a company that belongs to the Department of Agriculture, Livestock, Fisheries and Food of the Generalitat de Catalunya) among many others.
  • Real cases to apply your knowledge: you will be able to put your experience into practice by participating in projects with CETT-UB partner institutions such as the World Tourism Organization, the Barcelona City Council, or the Barcelona Provincial Council.
  • Our students have done internships: the Directorate General of Tourism of Catalonia, World Food Travel Association, Bullipedia, Catalan Agency of Cultural Heritage, and PRODECA.

  • Choose between face-to-face and blended learning. With the blended mode, you will take the program online and combine it with a face-to-face part at the end of the course.


  • A research-oriented Master's degree: this is the only Master's degree that offers a solid research base based on CETT's Research Groups' extensive trajectory and scientific production. You will have to take two subjects oriented to research methodology.

  • A Master's degree oriented to professional practice that allows you to carry out curricular and extracurricular internships. CETT-UB has more than 900 collaboration agreements to do these internships.

The Specialization in Tourism Management of Culinary and Gastronomic Heritage's general objective is to provide you with the necessary foundations to understand all the processes that are part of R+D+I in tourism.

To provide you with the knowledge to understand gastronomy phenomena from a geographical, historical, anthropological, sociological, and economic perspective and interpret them in their most global dimension.

The specific objectives of the specialization are:

  • To enhance the value of gastronomic resources so that you can create and develop destinations and projects for tourism promotion and management.
  • To train to develop analysis and research projects in gastronomic heritage, generate specialized knowledge, and transfer it to society.
  • To bring you closer to the knowledge of scientific methodology.
  • Develop your personal and interpersonal skills necessary to exercise leadership of innovative projects and transform the gastronomic and culinary tourism sector.
  • Provide the tools and techniques for analyzing and diagnosing current and future strategic challenges in the tourism sector.
  • Formulate the necessary strategies to guarantee its competitiveness and sustainability based on innovative and creative processes.


The competencies you will develop in this specialty are related to improving management skills applied in the development and valorization of the culinary and gastronomic heritage. These are some of these competencies:

The Master's Degree consists of the first block of core subjects in the three specialties, which allows you to lay the foundations of the concept of innovation applied to the tourism sector. In a second block, you will take the subjects specific to the specialization.

The Specialization in Tourism Management of Culinary and Gastronomic Heritage focuses on developing, through innovation, the relationship between gastronomic heritage and tourism to create creative gastronomic experiences.

Thanks to subjects such as "Food and Territory: Gastronomic Tourism," you will learn about the synergies between gastronomic culture, tourism, and its environment. On the other hand, with subjects such as "Knowledge and Transformation of the Gastronomic Product," you will learn about gastronomic resources' main characteristics and their link with the territory.

Besides, you will also learn the basics of traditional avant-garde cuisine and sustainable cooking.


The curriculum of the Official Master's Degree in Innovation in Tourism Management in any of its specialties has a duration of one academic year equivalent to one year.


This specialization in gastronomic and culinary tourism is aimed at those people interested in orienting their professional development towards the development of destinations and creating products and services associated with tourism through culinary and gastronomic resources.

People who are prepared to respond to the new paths and changes taking place in food and forms of consumption, especially in the associated leisure and tourism activities.
