GRATiR is the Tourist Accommodation and Restoration Research Group of the CETT Higher School of Tourism, Hospitality and Gastronomy of Barcelona.

The research activities of this group focus on responding to the challenges that companies linked to two of the pillars of tourism have to face, such as the tourist accommodation industry and the restaurant industry.

Research lines

  • Strategy, Performance and Productivity in Tourist Accommodation and Restaurants

    Companies in the tourist accommodation and restaurant sector are facing a period of profound transformation, where resource optimization and the use of new technologies have become essential requirements to remain competitive. In a constantly evolving market, where there is a need to manage a growing volume of data and challenge traditional models, it is necessary to rethink conventional approaches and develop more flexible and adaptable strategies.

    In this context, this line of research aims to generate cutting-edge academic knowledge focused on pricing strategies, operational performance evaluation, and the improvement of customer experience. This approach seeks not only to optimize internal processes within companies in the sector but also to promote data-driven decision-making, thereby supporting the continuous and sustainable evolution of the industry.

    Sustainability in the tourist accommodation and restaurant sector has become a fundamental pillar for achieving business excellence in a constantly evolving world. Adhering to ethical and sustainable principles, which integrate social, economic, and environmental dimensions, is key to driving responsible growth and long-lasting competitiveness.

    This line of research aims to identify and analyze the benefits derived from adopting these practices, both for businesses in the sector and for society as a whole. Special attention is given to practices that contribute to building a more balanced and just future. With a modern and bold approach, research in this field promotes the transformation toward more responsible business models, addressing current challenges and embracing new sustainability perspectives.

Dr. Oriol Anguera-Torrell

Director of the Tourism Accommodation and Restaurant Research Group

PhD in Economics from Pompeu Fabra University. He is a lecturer in the Bachelor’s Degree in Tourism and the Bachelor’s Degree in Culinary and Gastronomic Sciences at CETT-UB. He is the Director of the Research Group in Tourism Accommodation and Food Service Industries.

His current main research areas are tourism economics, hospitality economics, and revenue management in hospitality.

Brina Antúnez Pineda

Researcher at the Research Group in Tourist Accommodation and Food and Beverage Service

Master’s in Management, Organization, and Business Economics from the Autonomous University of Barcelona and Bachelor’s Degree in Finance from the Central American Technological University (Honduras). She is currently a lecturer in the Bachelor’s Degree in Tourism at CETT-UB. 

Her research projects focus on experimentation at the Alimara University Hotel (HUA), aiming to identify opportunities to improve productivity, efficiency, and sustainability in the hotel sector.

Álvaro Arrieta Valle

Academic Director of the Master’s Degree in Hotel and Restaurant Management

PhD candidate in the Business program at the Business School of the University of Barcelona. Master’s in Market Research from UNIR, Master’s in Restaurant Management from the University of Barcelona, and Bachelor’s Degree in International Hospitality from the University of Nantes. He is currently a lecturer in Business Management in the Bachelor’s Degree in Culinary and Gastronomic Sciences at CETT-UB and Director of the Master’s in Hospitality Management. He also leads the Alimara Living Lab, an innovation space applied to the hospitality and restaurant sectors. 

His research focuses on innovation, sustainability, and hospitality, with a special interest in how these areas can transform management and experience in hotels and restaurants.

Anaïs Cavallín

Director of the Bachelor's Degree in International Hotel Management

Master’s in Tourism Business Management from CETT-UB and PhD candidate in Tourism at the Open University of Catalonia. She is the Director and lecturer of the Bachelor’s Degree in International Hotel Management. Lecturer in the Bachelor’s Degree in Tourism and the Master’s in Hotel Management at CETT-UB. Her areas of expertise include sales and marketing in hotels. 

Her research focuses on exploring new sustainability opportunities for hotels, as well as promotion and sales strategies.

Polo Figini - Associate Professor, Department of Economics, University of Bologna

Dr. Paolo Figini

Researcher at the Research Group in Tourist Accommodation and Food & Beverage

PhD in Economics from Trinity College Dublin, he works primarily in tourism economics, collaborating on various research projects at CAST – Centre for Advanced Studies in Tourism, at the Rimini Campus of the University of Bologna, and as a researcher in the Research Group on Tourist Accommodations and Hospitality at CETT. 

He is also an Associate Professor of Economic Policy in the Department of Economics at the University of Bologna. His research focuses on tourism economics.

Nehru González Burgos

Academic Coordinator of the Master’s in Hotel and Restaurant Management

Master’s in Hotel and Restaurant Management from CETT-UB and Master’s in Financial and Administrative Management from the University of Barcelona, and Bachelor’s Degree in Tourism with a specialization in Hotel Management. He is currently a lecturer in Financial Management and Restaurant Management at CETT-UB and Academic Coordinator of the Master’s in Hotel and Restaurant Management at CETT-UB.

His areas of expertise include financial management, restaurant operations, and digital transformation in the hotel sector.

Dr. Enric López C.

Fundraising, Entrepreneurship and Awards at CETT Foundation

PhD in Pedagogy from the University of Barcelona. He is responsible for the Academic Excellence Awards for high school, undergraduate, master’s, and vocational training students at CETT. He is also responsible for the CETT Foundation Awards for Entrepreneurial Projects in the tourism, hospitality, and gastronomy sectors. He lectures in digital marketing, innovation, entrepreneurship, and other related fields. 

As a researcher, he has participated in research projects linked to organizations such as Vodafone and the Rural Tourism Observatory.

Dr. Núria Louzao Belmonte

Academic Coordinator of the Master’s in Hotel and Restaurant Management

PhD in Business Administration from the Business School of the University of Barcelona. She is a lecturer in the Bachelor’s Degree in Tourism and the Hospitality Management Degree, as well as Coordinator and lecturer of the Master’s in Hotel Management at CETT-UB. With a strong commitment to education and research, she combines her academic knowledge with extensive experience in the luxury hotel sector. Her areas of expertise include Hospitality Experience Management and Social Sustainability.

Her research focuses on exploring new trends and best practices in these areas, assessing their impact on the hospitality and service industries.

Helena Pérez Pérez

Academic Coordinator of the Master’s Degree in Hospitality Management and the Master’s Degree in Revenue Management, Digital Marketing and Social Media

Master’s in Tourism Project Launch and Development with a specialization in Business Digitalization from CETT-UB, and Bachelor’s Degree in Tourism with a specialization in Hotel Management from CETT-UB. She is currently the Academic Coordinator of the Master’s in Hospitality Management and in Revenue Management, Digital Marketing, and Social Media. In addition, she serves as a coach for international competitions in the framework of Revenue Management and Hospitality, and as Pilot Manager in the Living Labs at the Alimara University Hotel. 

Her areas of expertise include revenue management and innovation in the hotel sector.

Max Ros Petrov

Coordinator of University-Enterprise Integrated Projects

Master in Restaurant Management (CETT-UB) and Graduate in Gastronomic Sciences (UNISG). Coordinator of University-Business Projects and Professor in the Degree in Tourism, Degree in International Hotel Management, Degree in Gastronomic and Culinary Sciences and Master in Restaurant Management of CETT-UB. 

His areas of specialization include the fields of gastronomy, financial management and catering.
