The main targets of the course are:

  • To get to know the origins and evolution of wine-growing and oenology deepening in identifying the different varieties of grapes, the vegetative cycles of the vine, the influence of the soil and climate in the fruit as well as understanding the winemaking processes and techniques.
  • To identify the different denominations of origin and AOC and to understand their regulations to describe the various wines, liquors and distilled spirits, both belonging to the national and international areas.
  • To master tasting-methodology, the involvement of the senses in the different stages and the specific terminology used.
  • To develop key skills of the 21st century sommelier, ranging from cellar management to the application of the latest service techniques.
