With the CETT-UB Advanced Diploma in Gastronomic Pastry, you will enhance your creative skills through an innovative and scientific approach, helping you to design new dessert and sweet culinary creations.
You will learn the main advanced pastry techniques and develop the skills required to take on positions of responsibility in both professional pastry kitchens and restaurant pastry sections.

Gastronomic pastry: technique, science and creativity
The CETT-UB Advanced Diploma in Gastronomic Pastry is based on a combination of theoretical and practical learning, asynchronous online sessions (which you can complete at your own pace) and 100% practical, in-person classes at CETT-UB’s facilities.

Objectives of the Pastry Diploma
- Broaden your theoretical and practical knowledge of contemporary culinary techniques, using new ingredients and products in both classic and modern pastry.
- Explore multisensory experiences throughout the creation, preparation and presentation of sweet culinary offerings.
- Identify the raw ingredients used in sweet cuisine and pastry, and understand their sensory, chemical and functional properties.
- Acquire the tools you need to develop your own pastry recipes, including how to identify and calculate their nutritional value.
- Learn the main fine art techniques and key principles of the creative process, enabling you to develop your own sweet culinary creations independently.
- Create and develop restaurant pastry techniques, gaining an in-depth understanding of the importance of avant-garde techniques, plating, and specialisation in pre-desserts and petits fours.
- Respond to new dietary preferences and restrictions and create high-end alternative pastry options.
- Develop the skills and knowledge required to manage and lead a restaurant pastry section, a pastry workshop or your own business.
Diploma timetable
Classes for the Advanced University Diploma in Gastronomic Pastry take place on Mondays and Tuesdays, from 4.00 pm to 8.00 pm.

| Creative Restaurant Pastry | 4 | You will learn the tools and techniques required to create restaurant desserts, with an emphasis on plating techniques. You will put your skills into practice by creating desserts, with a particular focus on pre-desserts and petits fours. |
| Innovation in Pastry | 5 | You will gain foundational knowledge across a range of specialist areas in pastry. Sessions will explore artistic chocolate work, sugar artistry, alternative pastry, and vegan and sustainable options, providing a contemporary perspective on sweet cuisine. |
| Practicum | 8 | You will undertake a pastry work placement in a professional pastry kitchen or restaurant, applying the knowledge and skills acquired throughout the programme. You will have the opportunity to gain professional experience with a renowned company in the sector. |
University qualification in Gastronomic Pastry
Upon completion of this programme, you will be awarded the University Extension Diploma in Gastronomic Pastry.
You do not need to hold a previous university qualification to enrol on this programme.

Because we understand the challenges of living in a new and unfamiliar environment, the CETT-UB Campus offers the support of the International Relations Office (IRO), which provides guidance, advice and assistance to international students enrolled on master’s programmes.
The IRO team will provide you with relevant information on practical aspects of living in Barcelona, such as registering with the local municipality, applying for a Foreigner Identity Number (NIE) and finding accommodation in the city.
Administrative procedures related to your academic stay
The IRO team will provide you with up-to-date information on the administrative procedures you will need to complete once you arrive in Barcelona, offering guidance on essential documents such as the Foreigner Identity Number (NIE), local municipality registration and your university student card.
Languages
If Spanish is not your first language, the IRO team will advise you on how and where to learn it. They will also provide information on where to learn Catalan, helping you to integrate more easily into everyday life in the city.
You can also improve your Spanish through the certified courses offered by CETT-UB’s Language Department. Alternatively, if you would like to practise any other language in an informal setting, you can take part free of charge in our language exchange programme for CETT-UB students.

Professional internships in pastry
During your studies at CETT-UB, you will have the opportunity to undertake work placements at leading companies and institutions, allowing you to apply and complement the knowledge gained through your academic studies while developing the skills and competencies required for your future professional career.
Professional internship options
Curricular placements: Linked to subjects within the programme you are studying and forming part of your academic curriculum. These placements are therefore compulsory.
Extracurricular placements: Not included in the programme curriculum and undertaken on a voluntary basis.
Work placements are carried out through university-company cooperation agreements and are supervised by lecturers with expertise in the relevant fields.

We will also help you make contact with and support you throughout the process of accessing the companies and institutions that best align with your professional goals.
